Introduction to Pineapple Pastry


Pineapple pastry is a popular dessert that originated in Taiwan but has gained popularity worldwide. It is a light and refreshing pastry that is perfect for any occasion, be it a birthday party or a casual gathering. The pastry has a fluffy sponge cake base and is topped with a layer of fresh cream and juicy pineapple pieces. The combination of the moist cake and the tangy fruit makes for a mouth-watering treat that is hard to resist.


Ingredients Required for Making Pineapple Pastry


The ingredients required for making pineapple pastry are easily available and can be found in any local grocery store. Here are the ingredients you will need to make this delectable dessert:


For the Sponge Cake:


1 cup all-purpose flour

1 tsp baking powder

4 eggs

1 cup sugar

1 tsp vanilla extract

1/4 cup vegetable oil

1/4 cup milk


For the Pineapple Filling:


1 can of pineapple chunks

1/4 cup sugar

1/4 cup water

1 tbsp cornstarch


For the Whipped Cream Topping:


1 cup heavy cream

1/4 cup powdered sugar

1 tsp vanilla extract


Preparation of Pineapple Pastry:


Preheat your oven to 350°F (180°C) and line an 8-inch square baking pan with parchment paper.


In a medium-sized bowl, sift together the flour and baking powder.


In another bowl, beat the eggs and sugar together with an electric mixer until the mixture is light and fluffy. This should take about 5-7 minutes.


Add the vanilla extract, vegetable oil, and milk to the egg mixture and beat until well combined.


Gradually add the flour mixture to the egg mixture, and mix until everything is well combined and there are no lumps.


Pour the cake batter into the prepared baking pan and bake for 20-25 minutes or until a toothpick inserted into the center of the cake comes out clean.


Once the cake is done, remove it from the oven and let it cool completely.


While the cake is cooling, prepare the pineapple filling. In a small saucepan, mix the pineapple chunks, sugar, and water and bring the mixture to a boil.


In a small bowl, mix the cornstarch with a tablespoon of water and add it to the boiling pineapple mixture. Stir constantly until the mixture thickens.


Remove the pineapple filling from the heat and let it cool.


Once the cake has cooled, use a knife to cut it in half horizontally.


Spread the pineapple filling on top of the bottom layer of the cake, and then place the other half of the cake on top.


To make the whipped cream topping, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.


Spread the whipped cream on top of the cake, and then decorate it with pineapple chunks or any other fruit of your choice.


Chill the cake in the refrigerator for at least an hour before serving.


Tips for Perfect Pineapple Pastry


Make sure to sift the flour and baking powder together to avoid lumps in the cake batter.


Use room-temperature eggs and milk to ensure that the cake rises properly.
